Growing up, my Momma always made enough food to feed an army. Her chicken spaghetti was a favorite, especially at the church’s potluck suppers.
Momma was an amazing home cook, and no matter what dish she prepared, it was always a hit, with children and adults. Her chicken spaghetti recipe is still made in kitchens all over North Mississippi.
Give it a try in your own kitchen this week. I guarantee it will be a hit.
Chicken Spaghetti
1 whole chicken; boiled and deboned
2 cans cream of chicken soup
1 jar spaghetti sauce
1.5 pounds of Velveeta
1/2 cup chopped onions ( I use frozen)
1/2 cup chopped bell pepper
1 stick butter
1/2 stick butter
1 can Rotel (drained)
1 package spaghetti noodles (cooked)
Preheat oven 350 degree. Melt stick of butter in large casserole dish. Mix Rotel, chicken, soup, spaghetti sauce, and Velveeta in large bowl. Sauté' peppers and onions in half stick butter. Add to mixture. Add noodles. Pour in casserole dish and cook until cheese bubbles, about 30 minutes.
15-minute Beef Stroganoff
2 pound ground beef
2/3 cup water
1 can cream of mushroom soup
1 cup sour cream
2 tablespoons flour
Noodles or rice
Brown meat. Add water and soups. Heat to boiling. Reduce heat. Blend sour cream and flour and add to the meat. Cook and stir until thick. Heat through but do not boil. Serve over rice or noodles. This is delicious with English peas.
Mexican Cornbread
1 cup all-purpose flour
1 cup white cornmeal
1 egg
1/2 cup oil
1 cup buttermilk
1 can drained corn
1 medium diced onion
1 medium diced green pepper
1 cup shredded cheese
1/2 teaspoon red pepper
Stir ingredients together. Melt 1 tablespoon shortening in an iron skillet. Pour ingredients in skillet. Bake 30-35 minutes at 400 degrees.
Minute Chocolate Mug Cake
1 Coffee Mug
4 tablespoons flour (not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
Small splash of vanilla
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't worry.
Allow to cool a little, and tip out onto a plate if desired.
