Many years ago, I found a cookbook that has many quick and easy, four ingredient dishes. This cookbook has come in handy so many times. A lot of the ones I've tried, I've doctored up the second time around, such as seasoning. Most of these yummy recipes use food you already have in the pantry and freezer, which to me, is a blessing. I'm including foyr delicious main dishes and one dessert recipe.

Beef-Rice Casserole
1 pound ground round or lean chuck
2 cans cream of onion soup
1 package dry onion soup mix
1 cup rice, uncooked
Bake 350 degrees
Mix all ingredients. Put in baking dish and bake covered. Cook one hour.
Serves four to six
Quick Enchiladas
2 (15 ounce) cans hominy, drained
1 cup chopped onion
2 cups grated cheddar cheese
1 (15 ounce) can chili or enchilada sauce
Place hominy and onions in casserole. Top with 1/2 of cheese. Spread chili over top and then remainder of cheese. Bake 350 degreesfor 45 minutes.
Serves four to six
Chicken Supreme
4 boneless chicken breasts
2 slices onion
4-5 potatoes, peeled and quartered
1 can cream of mushroom soup
Line casserole with foil. Place chicken on foil. Top chicken with onion and place potatoes around chicken. Pour soup over potatoes and chicken. Seal foil tightly over chicken.
Bake 300 degrees for 90 minutes.
Serves four
Oven Fried Ritz Chicken
8 boneless chicken breasts
1/2 box Ritz crackers (2 sleeves), crushed into fine crumbs
1/2 cup Blue Plate Mayo
1/4 teaspoon pepper
Dip chicken in mayo and roll in cracker crumbs with pepper. Place chicken in casserole dish and bake 350 degrees, 30 minutes on each side.
Serves six to eight
Pineapple-Lemon Pie
1 (6 ounce) can frozen lemonade
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) carton Cool Whip
1 (15 1/4 ounce) can crushed pineapple, drained
Mix above ingredients and pour into graham cracker crust. Freeze until ready to serve.
