With hot temperatures still with us, it does allow more reading time! I find that popsicles are a must item on our grocery list. Every flavor in the large package is delicious. When our children were in school, each afternoon was a stop to pick their favorite treat, which usually consisted of orange-sherbet push up, Eskimo Pie, or an ice-cold orange drink. Times have not changed that much!
This morning, I am reading from a magazine entitled Taste of Home, the June/July 2003 issue, which is full of recipes and funnies. Southerners do enjoy good food and gathering with family and friends, and maybe more so in the fall, when outdoor cooking is easier.
Almost all southern cooks can prepare biscuits, but I am not one of those. During the early years of marriage, I purchased endless sacks of flour, trying to cook like my mother and mother-in-law. My husband can prepare the best! The kitchen is not only a woman's domain.
There is an article in this issue about a lady, who was a student in a weight-loss class and wanted to prepare zucchini chips for the class to munch on, rather than fat-laden potato chips. She peeled and sliced the zucchini very thin and put two baking sheets full of the slices in the oven to bake. After 30 minutes she went to check the chips, and to her surprise, found they had baked away to nothing. Her family had a good laugh about the disappearing zucchini! They have no calories.
Another kitchen blooper was when a newly married lady invited another couple to dinner. She prepared stuffed Cornish hen, along with delicious side dishes. She was very proud of herself with the outcome of the meal, but surprised when the company left so soon. She learned later that they stopped at a fast-food restaurant on the way home because they were still hungry. You see, she had baked only one Cornish hen to serve four adults!
Food for Thought: Do not forget little kindnesses, and do not remember little faults.
