Some of my best memories growing up were sitting around the super table with my family and discussing our day.
My sisters and I were always involved in some school or church activity, and Momma was always finding a quick recipe for supper. We lived in the country, so running to the nearest fast food restaurant was not an option. We had fresh veggies out of our garden, and sometimes Momma would make some cornbread and fix an all veggie meal. Those sure were good.
As a child you really don’t appreciate the goodness that comes from having your own fresh produce. I am in the process of getting our garden planted. I am so excited about growing my own food. I love having fresh, sliced tomatoes on the table with every meal, or my favorite meal, a fresh tomato sandwich on white bread, with Blue Plate mayo.

Mexican Chicken Casserole
4 Chicken Breasts, Boiled
1 Onion, Diced
1 Bell pepper, Diced
1 Can of Cream of Chicken Soup
1 Can of Cream of Celery Soup
1 Can of Cream of Mushroom Soup
1 Can of Rotel
6 ounces of Rotel Cubed
1 Bag of Tortilla Chips
Boil chicken. Saute’ onion and bell pepper. Combine onion, Bell Pepper with soup and Rotel, Warm on stove top.
In a baking dish, layer tortilla chips, soup chicken, cheese. Repeat.
Bake 350 for 35 minutes.
Momma’s Tuna Salad
1 Can Tuna, Drained
2 Tablespoons Sweet Relish
1 8-ounce package of Elbow Macaroni, cooked and drained
¼ Cup Purple Onion Diced
2 Cups Blue Plate Mayo
Salt and Pepper
I love this with garden fresh tomatoes, cucumber and green onions. Serve it with your favorite crackers.
Ambrosia Salad
11 ounce can mandarin oranges, drained
8 ounce can crushed pineapple, drained
2 cups sweetened shredded coconut
2 cups miniature marshmallows
8 ounce container Cool Whip
Place the oranges, pineapple, coconut and marshmallows in a large bowl. Add the Cool Whip and, using a rubber spatula, gently fold the mixture until all of the ingredients are evenly distributed.
Cover and refrigerate until ready to serve. Ambrosia can be stored in the refrigerator for up to 3 days.
This can be served with any meal. It's delicious!
