And, once again IT strikes taking down both the Man and Woman of the House! COVID! The mysterious disease from our friends over in China. It’s not quite as surreptitious or bizarre as it appeared when I was taken down with the malady once before in 2019.
I remember my daughter and her family, and I were coming home from a short vacation on the Mississippi gulf coast, and we had heard some tweaks and twerks and some vague description of the new virus but really knew not enough to rationalize as to how it would affect us and the entire country. We, however, did realize it was highly contagious and we needed to be cautious and beware of this new bug.
We also had been told that we needed to wash our hands with disinfectant and spray down all surfaces that might have come in contact with the virus. We, of course had nothing in the way of sanitizing supplies at the time. We began to search stores in Gulfport for Lysol spray, hand wipes and sanitizer, Clorox, paper towels, and any other things we would need to protect ourselves. By the time we were on our way home and stopped at the first retail store, the shelves were empty. I really should not tell this however its way passed the time we could be arrested for our actions so here goes. My grandson was going into each store we passed on the way home looking for things we needed and somehow coming up short as the supply had already been exhausted. He told us the one time he did make a haul of the supplies, that he had took Lysol spray out of some one’s cart because they had several of the bounty in their cart, as they walked down an aisle and then ran with it to the check-out counter. Almost like stealing valuables but not quite. He was so proud of himself.
I remember buying groceries, swathed with a mask, and gloves and carrying them home and laying them out on our kitchen island and spraying each item down with sanitizing spray. Then of course we would change our clothes and wash them immediately. All this now, makes me think of the movies where the scientist wore hazmat suits to collect the data. All we needed was a hazmat suit and I probably would have worn one.
Roy and I both had Covid 19 in December 2019 and really had a time of it as I remember. We lost our taste and never got it back. It left lasting effects. We took the vaccinations and have tried to safeguard ourselves in the past few years and have been successful up until a week ago when we lost a good friend over in the Delta and went to her funeral. I brought Covid home with me and like a good wife, I shared with my husband. We have been down for a week now and are finally seeing the finale, we hope. It’s been hard again. It’s been challenging again. And it’s been something I surely don’t want to repeat. The isolation of the culprit I believe, is the most difficult. But this time I was more prepared, and I can tell you we honestly did not pilfer or take from anyone else.
As you WILL lose your appetite with Covid we have tried to stay hydrated and Body Armor drinks are wonderful as they have so many of the things you lose during this infection. Lots of protein is also good. I am giving you a recipe that has lots of protein.
Baked Chicken Breasts – 2 deboned skinned chicken breasts, Place chicken between two pieces of saran wrap and pound to a thinner piece of meat. Dredge chicken in a beaten egg and then dip into a mixture of ½ cup of flour, ½ cup of seasoned breadcrumbs, ½ cup of Parmesan cheese, salt and pepper. Bake on parchment paper covered sheet pan for 30 minutes at 350°
